Recently, J has gone paleo! So naturally, being that I love to cook healthy foods, I ran with it. I made this AMAZING scramble in under 15 minutes so I had to share! It serves 2 & is the perfect breakfast to eat in bed while watching football & sipping coffee.
+ PALEO + GLUTEN FREE +WHOLE 30
INGREDIENTS:
+Hot Italian sausage (I got mine from Trader Joe’s)- 2 links
+Red/ green bell pepper- about 1/2 cup, chopped
+Broccoli floret, about 1/4 cup chopped
+White onion, about 1/4 cup chopped
+4 Organic eggs
+An avocado
WHAT TO DO:
+Take the casing off the sausages (kinda gross but worth it)
+Place sausages into a hot pan and break down the meat to make a “ground” consistency as the meat begins cooking.
+Add in all chopped veggies to sausage pan and place a lid over the mixture.
+In a separate pan, scramble the 4 eggs. Once the eggs are cooked all the way through, add them to the sausage veggie pan.
+Serve immediately & top with 1/2 an avocado. Enjoy!
