
This is by far one of my favorite easy meals to make. I love fried rice so I wanted to make a healthier twist to it. This would be a perfect easy dinner or meal prep for the week! (This recipe makes 2 servings)
Ingredients:
-Brown Rice (I use the Trader Joe’s packaged kind because it’s easier!)
-Chicken breasts, I used 2 small ones (you can use leftover chicken if you have it or grill your own for this meal.)
-Frozen/fresh peas & carrots (about 2/3 cup)
-Diced onion (about 1/4 cup)
– 2 Cloves garlic
-Tablespoon low sodium chicken stock
-Teaspoon Teriyaki sauce
-1/2 teaspoon low sodium soy sauce
-2 eggs
-Garnish: green onion & sesame seeds (about a tablespoon of each or to taste.)
*** I like to use a large enough pan to make sure I have enough room to let my eggs get scrambled.
Directions:
- First, either heating up leftover chicken or making your own, add onions, peas and carrots to sweat down the onions. Once veggies have softened, add the garlic. I like to put a lid on the pan to seep in the flavor also. Once chicken is cooked through, add rice.
- To your rice mixture, add the teriyaki sauce, soy sauce and chicken stock. Mix it around and put the lid back on to consolidate the flavor.
- Make a large enough opening in your rice to scramble the eggs in the middle (optional to scramble them in a different pan but I like to save dishes and the flavor seeps into the eggs easier.)
- Mix everything together and add your sesame seeds.
- Serve immediately with your green onions on top and enjoy! (Or pack away in your fridge for your lunch, saves about 4-5 days.)
