Breakfast Tacos

Okay, real talk. This is one of my fav breakfasts I’ve ever made. I know I post a lot of breakfast recipes but the morning is my favorite time of day so it should come as no shock that I love to cook breakfast foods. Sry not sry. But on a  real note, these are super filling and leave me feeling so full and energized!

Ingredients: (for one serving)

-2 of any whole grain or organic corn tortilla (my favorite ones to use are the Mi Rancho organic corn tortillas, I swear the flavor of these are INSANE)

-3 egg whites (In my pictures, I used the whole egg. The egg yolk provides lots of nutrients, just a little more calories but I think we’ll all live.)

-Onion, diced (just a handful or to taste)

-Green bell pepper, diced

-Handful of spinach

-Sprinkle low fat cheese (I use cheddar but you can use pepper jack to spice it up)

-Ghee or oil of preference

-Top with any salsa or avocado!

***Optional to add turkey bacon, ham, breakfast sausage, or more veggies for more protein/more of a filling breakfast.

Directions:

  1. Take a 1/2 teaspoon of ghee and sauté onion and bell pepper, add salt and pepper to taste.
  2. Add egg whites to veggies in the pan and start scrambling (side note: I only ever scramble my eggs while they’re in the pan. I know a lot of people who like to whisk their eggs and then add them to the pan but I find the most fluffy texture to be made in the pan.)
  3. Add handful of spinach while your eggs haven’t quite reached their fully cooked point, or when they’re still a little runny. Let your spinach wilt and your eggs cook a little more to add the cheese.
  4. In a separate pan or in the microwave, heat your 2 tortillas.
  5. Once tortillas are heated, add your egg mixture and then top with desired salsa or avocado, or both!! Enjoy!
