Protein Pancakes

What you’ll need:

2 tbsp vanilla protein powder

2 eggs

1 large banana

1/8 tsp baking powder

What to do:

  1. Mix together dry ingredients in a bowl. **you can honestly do steps 1 & 2 all together, it shouldn’t make a difference!
  2. Mash banana and whisk in eggs.
  3. Heat non-stick pan with coconut oil and pour batter into pan (about 2 tablespoons, depending on pancake size preference.)
  4. Makes about 5-7 pancakes depending on size! If you’re like me, by the last one it will be the rest of the batter and make a massive pancake bc impatience. Serve immediately and enjoy!

Top with fruit, pecans or walnuts, almond butter, peanut butter- whatever you want!
