As you know, making unhealthy recipes somewhat healthier for you is one of my fav things to do. I came across a recipe on Pinterest (where else?) but I made some tweaks to make it vegan and to make the taste a little better. I’m not kidding when I say these cookies are SO good that you don’t even care if they’re healthy or not. This is one of my fav recipes that I’ve ever made, no joke.
I N G R E D I E N T S:
+ 2 cups almond flour
+4 tbsp organic coconut oil
+3 tbsp agave nectar
+1/4 tsp baking soda
+1/8 tsp almond extract
+1 tsp vanilla extract
+1/2 cup dairy free OR 70+ percent pure cacao chocolate chips
+1/4 tsp water
S T E P S
+Preheat oven to 350°
+Add almond flour and baking soda to a bowl.
+Fold in MELTED organic coconut oil, agave nectar, vanilla and almond extracts.
+After mixing those, add the water. **This tiny splash helps bind everything together!!
+Lastly, add in your chocolate chips & place on a baking sheet. Make sure to section off cookies in the correct portions (Using a cookie scooper helps). After this, smash the cookies down to make them into a round, saucer shape.
+Bake for 10-12 minutes & let cool. Surprisingly, these cookies are just as good if not BETTER the next day- so that’s another plus!
