Idk about you, but pasta salad is one of my fav things to eat in the summers. I love making simple things like this because sometimes the simplest dishes are best. This is the perfect side dish to bring to a backyard bbq but I also eat this for lunch bc it’s filling enough to get me through the day & it’s so easy to prepare.
INGREDIENTS: (makes 2 servings)
- Veggies of choice: I used zucchini, broccoli and cherry tomatoes,all totaling about a cup full.
- 1 1/2 cup veggie pasta
- 2 Tablespoons of olive oil
- 2 Tablespoons fresh lemon juice
- Salt and pepper to taste
- 3/4 cup pine nuts
WHAT TO DO:
- Preheat oven to 350 and begin boiling water for pasta.
- Prep veggies & place in oven safe dish. Top with olive oil and salt & pepper.
- Put veggies in the oven for 15-20 min until soft.
- Once pasta is cooked al dente, add in roasted veggies, lemon juice and pine nuts.
- Serve warm or cold, keeps for 1 week. Enjoy!

This looks amazing!! I am a vegetarian, but with a serious sweet tooth, I find that pasta really fills me up, and helps to keep my hand out of the cookie jar!! I will definitely try this recipe!
