Banana Protein Muffins

I’m really a fan of having something easy to grab in the mornings for breakfast during the week. Sometimes, I feel like making a huge breakfast but, most of the time I wake up lazy af so these muffins are perfect for that! 

WHAT YOU’LL NEED: 

  • 3 ripe bananas 
  • 3/4 cup oats 
  • 2 scoops vanilla protein powder 
  • 2 eggs
  • 2 TBSP organic honey
  • 1/2 TSP vanilla extract 
  • 1 TSP baking powder
  • 1 TSP baking soda 
  • Any toppings that you prefer such as dark chocolate chips, blueberries, pecans etc. 

**makes about 10 muffins. 

WHAT TO DO:

  1. Preheat oven to 350 and grease muffin tins with coconut oil or ghee (save paper by not using muffin liners!) 
  2. Mash bananas to chunky consistency. 
  3. Mix together all dry ingredients and add into the mashed bananas then add in the eggs, honey, and vanilla. 
  4. Pour batter halfway into the muffin tins and add desired toppings! 
  5. Bake for 18-20 minutes and/or stick a toothpick in the middle to see if it comes out clean!
