
I’m really a fan of having something easy to grab in the mornings for breakfast during the week. Sometimes, I feel like making a huge breakfast but, most of the time I wake up lazy af so these muffins are perfect for that!


WHAT YOU’LL NEED:
- 3 ripe bananas
- 3/4 cup oats
- 2 scoops vanilla protein powder
- 2 eggs
- 2 TBSP organic honey
- 1/2 TSP vanilla extract
- 1 TSP baking powder
- 1 TSP baking soda
- Any toppings that you prefer such as dark chocolate chips, blueberries, pecans etc.
**makes about 10 muffins.
WHAT TO DO:
- Preheat oven to 350 and grease muffin tins with coconut oil or ghee (save paper by not using muffin liners!)
- Mash bananas to chunky consistency.
- Mix together all dry ingredients and add into the mashed bananas then add in the eggs, honey, and vanilla.
- Pour batter halfway into the muffin tins and add desired toppings!
- Bake for 18-20 minutes and/or stick a toothpick in the middle to see if it comes out clean!
