Hidden Veggie Mac & Cheese

Did you just read that right??? Yeah. You did. My FAV food is none other than Mac & cheese and I think it’s a definite crowd pleaser (I should’ve said crowd cheeser but you saw that coming). I added extra veggies and used veggie pasta from Trader Joe’s. So while it’s not TOTALLY clean, it’s still better for you than out of the box stuff. 

WHAT YOU’LL NEED:

  • 2 1/4 cups of milk of choice (I used plain almond milk) 
  • 2 cups pasta of choice (again I used veggie)
  • 1 cup shredded cheddar cheese
  • 5-6 baby carrots (or one regular carrot)
  • 1 cup cauliflower 
  • 3 TBS Ghee 
  • Optional use of: garlic powder, black pepper and paprika. 

WHAT TO DO:

  1. Boil water to cook your pasta. Once pasta is cooked, drain and set aside. 
  2. Steam veggies until mashable consistency (6-7 min). Then add veggies to a blender with 1/4 cup water or milk. 
  3. Add veggie mixture to pan on medium heat with 1 TBS of ghee. Slowly whisk in your cheddar and milk and keep whisking if mixture is chunky. 
  4. Stir in pasta and add 2 TBS of ghee and spices if desired. Serve immediately and enjoy!!
