Pancakes + Childhood 

Goooood morning Sunshiners!!

I’ve been craving pancakes like crazy and blueberry have always been my favorite. One of my favorite childhood memories is when my mom would make my brother & me pancakes. I loved watching her make the batter and pour the pancakes & that smell was always so amazing. She would always pour the batter and make the tiniest little pancake for each of us. It was our thing + I loved our little traditions. Oh also, my moms favorite thing to call me was pancake so you could say me & pancakes are pretty tight when it comes to memories.

What are some of your favorite family memories?? 💛

What you’ll need:

2 tbsp vanilla protein powder
2 eggs
1 large banana
1/8 tsp baking powder
A tiny bit of orange zest

1/8 tsp of almond extract

A sprinkle of nutmeg, cinnamon and allspice

I added blueberries (about 3/4 cup) but you can add fruit of your choice!!

What to do:

Mix together dry ingredients in a bowl. **you can honestly do steps 1 & 2 all together, it shouldn’t make a difference!
Mash banana and whisk in eggs.

Heat non-stick pan with coconut oil and pour batter into pan (about 2 tablespoons, depending on pancake size preference.)

Makes about 5-7 pancakes depending on size! If you’re like me, by the last one it will be the rest of the batter and make a massive pancake bc impatience. Serve immediately and enjoy!

I topped them with Trader Joe’s organic maple syrup +agave. Also you can top with fruit, pecans or walnuts, almond butter, peanut butter- whatever you want!!
