Egg White Omelet

Okay so TBH I haven’t attempted to make an omelet in years so pls excuse the unperfected quality of it.. BUT I’m always looking for ways to switch up my breakfasts bc I don’t like to eat the same things everyday. If you’re looking for the same, check this out !

 

Ingredients:

  • Any veggies you would like, I used red & green bell pepper, white onion and spinach. Options are endless you could add turkey bacon or mushrooms for more of a hearty omelet!
  • Ghee or any other healthy alternative to butter (coconut oil, avocado oil, whatever your preference is!)
  • 3 egg whites
  • Sprinkle cheese of choice (I used sharp cheddar)

 

Instructions:

  1. Sauté veggies in ghee with salt & pepper to taste on medium/low heat.
  2. Use a hand mixer to fluff your egg whites until they are a foamy texture (see picture below.)
  3. Pour egg whites on top of sautéed veggies and add sprinkle of cheese.
  4. Wait about 5 minutes & then the hard part… the flip. But, once you’ve done that, wait about 5 more minutes for the other side and then serve immediately. Top with avocado, salsa and add fruit to your side. Enjoy!
